Whole30 Meal Planning – Week 1
Week one is over! I successfully completed 1/4 of the Whole30 program without any cheats and slip-ups. The first week wasn’t the easiest, but I survived. I overcame the exhaustion and kill everything stage to have a delightful Valentine’s Day and Day 7 of the program! Here is a little recap of week one’s recipes:
Whole30 Meal Planning – Week 1
- Monday: Whole30 Pulled Pork Carnitas accompanied with Southwester Roasted Butternut Squash
- Tuesday: Whole30 Asian Beef and Broccoli
- Wednesday: Whole30 Teriyaki Salmon and Sautéed Brussel Sprouts
- Thursday: Whole30 BBQ Sauce smothering Whole30 Pulled Pork Carnitas
- Friday: Whole30 Teriyaki Salmon and Sautéed Brussel Sprouts (Catholics do not eat meat on Fridays in Lent hence the repeat of my recipe. It was so good I wanted it twice!)
- Saturday: Whole 30 Breakfast For Dinner with Whole30 Oven-Roasted Asparagus
- Sunday: Whole30 Teriyaki Salmon Salad topped with Whole30 Herb Citrus Vinaigrette (Every Sunday we do family dinner. This was our yummy lunch)
Breakfast was the same yummy Whole30 Sweet Potato Hash with a variety of eggs on top. Lunch was a mix of salads and leftovers. Snacks were nuts and fruit to fill me up in times where I was a bit hangry.
Back to today, Sundays are always delightful as the hustle and bustle of the day ends with family dinner. Sundays at my house are filled with church, grocery shopping, frantic laundry and ends with the highlight of family dinner to cap the day off. It is filled with babbling babies, loud Italians, delicious meal and a tremendous amount of love. With the family on this journey as well, our dinner was a bit different than most.
My Dad made Encrusted Pork with a balsamic vinaigrette drizzled on top. It was straight from the Whole30 book and wowed me! My Mom substituted our standard dessert for a fruit salad which was very satisfying after a full week of Whole30. While the food was scrumptious, the company was even better. We spent most of our night together trading Whole30 recipes.
Our conversation made me so excited to share my Week 2 journey with you. There will be some amazing recipes and hopefully a few workouts with all my new found energy. 🙂
