Meal one of Saturday night was an epic failure. I took one bite and made Brad throw it away. It was awful and taught me a lesson, not every blog has quality Paleo and Whole30 recipes. There is bound to be recipes blunders, and I will gladly share my mistakes so you can avoid a headache.

So meal one is in the trash, and my stomach is grumbling. I need a quick, delicious meal stat! If I don’t find one, I am bound to find Pizza Hut’s heart shaped pizza. While I love the concept, it goes against everything on Whole30. I pull open the fridge and see eggs, asparagus and leftover sugar-free sausage from my previous meal, Whole30 Sweet Potato Hash. Immediately, I think breakfast for dinner!

My Whole30 breakfast for dinner was quick, filling and still healthy.

Whole30 Breakfast for Dinner Ingredients

  • Sugar-free sausage ( I used the 365 brand from whole foods)
  • 4 eggs
  • splash of coconut milk
  • 2 potatoes
  • 1/2 tsp garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • red pepper flakes (to taste)
  • oven-roasted asparagus

Whole30 Breakfast for Dinner Recipe

Whole30 Sausage Patties

  • Create four patties out of the sugar-free sausage.
  • Fry patties in a frying pan until cooked.
  • Remove cooked patties and place aside in a warm oven until later.

Whole30 Fried Potatoes

  • Place 2 potatoes in the microwave and cook.
  • When you potatoes are cooked, remove and dice into 1-inch pieces.
  • Place diced potatoes into the frying pan and add salt, pepper, red pepper flakes and garlic.
  • Once potatoes are crispy remove from pan and set aside in a warm oven until later.

Whole30 Scrambled Eggs

  • Scramble 4 eggs, coconut milk, salt and pepper
  • Place in the frying and cook.

Once the Whole30 scrambled eggs are finished, pull the Whole30 fried potatoes and Whole30 sausage out of the oven. To make the meal a little healthier, I would recommend pairing with oven-roasted asparagus. Place all items on a plate and enjoy!
