For my first recipe, I made Whole30 Sweet Potato Hash. It is the perfect way to start the week and each morning. I am totally not a morning person, and I will do anything for 10 more minutes of sleep. The Whole30 Sweet Potato Hash can be made on the weekend’s and warmed up all week for a quick hot breakfast.

I did wake up a few minutes early, scramble an egg with coconut milk  (sugar-free version) and throw it on top of the Whole30 Sweet Potato Hash. When I went to work, I popped it in the microwave for 45 seconds and enjoyed!

Week one of Lent is down, and I am finally ready to share my Lenten promise. I had to make sure we had delicious recipes to share as they are all new!:)

This year, the family and I selected a big one and started Whole30. Whole30 is cutting out the majority of my vices and forces me to look at the hardships in a new way. Like many people, I normally try to handle all of life’s stresses on my own. This includes binge eating and not admitting needing help from God, friends and family. Well, when you cut out all the quick worldly fixes, you fall back on what is truly important you faith, family and friends.

Zucchini "zoodle" Lo Mein

Zucchini “Zoodle” Lo Mein is the perfect pairing for Thai Chicken Peanut Lettuce Wraps. When I think Thai food, I want the lush textured noodle to accompany any dish. The problem is I am a carb addict, and part of my fake it until you make it is decreasing carbs. The way I eat them, made those work pants a little too tight. 🙂

Zoodles are an excellent way to reproduce your favorite dishes without the carbs. As I made Zoodle Lo Mein as a side dish with Thai Chicken Peanut Chicken Wraps. I used the same sauce as it is delicious and easy!! Read more

Let’s start by saying; I am a picky eater. Growing up, I was on the chicken strips and burgers only diet. It wasn’t until dating Brad (my hubby) at 17 that I went beyond the diner food. While that was a big step, it took me until after college to truly try food I still called gross…Sushi and Thai food being the main culprits.

Five years later, Sushi and Thai food are weekly staples. I believe I have to make up for lost time and have them a minimum of one time a week. Traditionally, this has meant eating out at our favorite restaurants. For all my St. Louis people, Pearl Café is by far the best Thai food.

Tomato Bisque Soup

Like everyone else in St. Louis this weekend, I busted out the grill and beer to fully enjoy the beautiful weather. Weekends like this are truly a blessing! It gives us hope that Spring is coming and the cold, short days will be behind us soon. If you couldn’t tell, I hate the cold…unless it snows.

Wednesday is dipping back down the 30s, and I am going to need some motivation to get out of my warm, cozy bed. Tomato Bisque Soup for dinner will do the trick.

As I am not a big fan of straight tomatoes, I always look for a recipe that contains more than just the standard soup. This Tomato Bisque Soup gives a new life to with fire-roasted tomatoes and the addition of carrots, onions and celery.

Seeing my family on the holidays is warms my heart, but what really gets me excited is all the delicious treats that stuff my stomach. I dream of the rich, full fat, cheat on your diet kind of days. It has to have the right amount of sweet with the tang of the mustard. Seriously, though, I love honey mustard so much that my mouth is watering just thinking about it.
