Seeing my family on the holidays is warms my heart, but what really gets me excited is all the delicious treats that stuff my stomach. I dream of the rich, full fat, cheat on your diet kind of days. Days filled with sneaking leggings into a classy family affair, so there is just enough room for my extra plate. Who are we kidding holidays are two plate kind of days.

Well, Christmas Eve gave me a new cheat on your diet recipe. It includes everything that I love but typically bypass for the sake of semi-fitting in my pants. It contains a masterpiece of woven bacon, Parmesan crisp, homemade honey mustard and of course carbs.

This next meal is full of Pinterest ideas to make a mouthwatering Chicken Club Sandwich. My Sister-in-law, Katie, whipped this up and it was wonderful. It is a new twist on an old classic that will have everyone thinking you’re a wiz in the kitchen. Chicken Club Sandwich Ingredients: (built for 2 sandwiches)

  • 1 Cooked Chicken Breast
  • 6 slices of Bacon which is best woven 
  • Your favorite spread, ours is homemade honey mustard
  • 4 slices of Italian Bread
  • ¾ cup of cooked Parmesan cheese to make Parmesan crisp
  • 2 leafs of lettuce
  • 1 Tomato
  • 1 Avocado

Directions for Chicken Club Sandwich:

  1. Cook extra chicken earlier in the week. It will keep for a few days and gives you the main component for this scrumptious club. For goodness sake, it is in the name!
  2. Cook your bacon. I suggest weaving it like we did here. The weaving ensures you have the perfect bacon bite from start to finish. Plus, it allows the bacon stays on the sandwich and off your lap.
  3. Create your honey mustard spread by following this 4-step recipe.
  4. Wash and slice your lettuce, tomatoes, and avocado.
  5. Sprinkle Parmesan cheese on parchment paper to be about the size of a CD to make Parmesan crisp. Place in the oven for 5 minutes or until crispy.
  6. Assemble your mouth watering sandwich.
