Whole30 Coconut Chicken

I have hit this magical stage that the Whole30 calls Tiger Blood!

People at work think I have lost it as I keep telling them, 3 more days until Tiger Blood hits as if is common knowledge. Of course, everyone at work was eager to know how Tiger Blood day one was going. I even had a phone full of Tiger blood memes which include the beauty to the right.
Well, here is the truth. I don’t think my Tiger Blood stage is like the light switch that the book described. The crazy dreams have ended, and people are starting to notice that my waist and face are thinner. This is always an awesome feeling, but I assumed Tiger Blood stage would feel different. For goodness sakes, Whole30 called it something so bad ass.

16 days in and I can see the change in my cravings and habits. Where I use to crave greasy, sugary and fatty food after a long day, I am now looking for great conversations with a friend. I truly feel my emotional eating will be a thing of the past after these 30 days. We are on the downward slope and I can already see my changed habits as the normal fix was cut out.

To celebrate receiving tiger blood, I made coconut shrimp and chicken for dinner.

Ingredients:

  • 1 1/4 lb chicken breast tenders
  • 1/4 cup coconut oil
  • 2 eggs
  • 1/4 cup coconut flour
  • 1 1/4 cup coconut flakes
  • 2 tbsp tapioca starch
  • 1 tbsp coconut sugar *omit for whole30
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1 tsp granulated garlic
  • 1 tsp salt
  • 1/2 tsp pepper
Spicy Mango Dip
  • 1 cup pineapple and orange
  • 1 tbsp raw honey *omit for whole30
  • 1 tbsp coconut aminos
  • 1 tbsp apple cider vinegar
  • 1/2-1 tsp red pepper flakes or to taste
Directions:
1.  Preheat oven to 400F.  Line cookie sheet with parchment paper and coat heavily with coconut oil.
2.  Lightly beat 2 eggs in a bowl.
3.  Mix up the breading in a shallow dish (everything that’s left).
4.  Dredge chicken through egg then batter with breading and transfer to cookie sheet.
5.  Bake in the oven for 20 minutes, flip, bake for another 10 minutes.
6.  Make the dip by food processing all, and adding red pepper flakes last.
