Zucchini “Zoodle” Lo Mein
Zucchini “Zoodle” Lo Mein is the perfect pairing for Thai Chicken Peanut Lettuce Wraps. When I think Thai food, I want the lush textured noodle to accompany any dish. The problem is I am a carb addict, and part of my fake it until you make it is decreasing carbs. The way I eat them, made those work pants a little too tight. 🙂
Zoodles are an excellent way to reproduce your favorite dishes without the carbs. As I made Zoodle Lo Mein as a side dish with Thai Chicken Peanut Chicken Wraps. I used the same sauce as it is delicious and easy!!
Zucchini “Zoodle” Lo Mein Peanut Sauce Ingredients:
- 1/2 cup reduced-sodium chicken broth
- 2 tbsp peanut butter
- 1/2 tablespoon Sriracha chili sauce
- 1 tbsp honey
- 1 tbsp soy sauce
- 1/8 tbsp freshly grated ginger
- 1 clove garlic, crushed
Directions to make Zucchini “Zoodle” Lo Mein:
- Transform you Zucchini into noodles. You can either buy a zoodle maker or use your trusty cheese grater. We used a cheese grater as who needs another kitchen gadget.
- Heat a pan with oil.
- While the pan is heating, crush some peanuts.
- When the pan is warm, dump in zoodles.
- Cook and stir periodically until zoodles are tender bout 6-8 minutes.
- Toss in Peanut Sauce, dress with crushed peanuts and serve.
