Whole30 Sweet Potato Hash
For my first recipe, I made Whole30 Sweet Potato Hash. It is the perfect way to start the week and each morning. I am totally not a morning person, and I will do anything for 10 more minutes of sleep. The Whole30 Sweet Potato Hash can be made on the weekend’s and warmed up all week for a quick hot breakfast.
I did wake up a few minutes early, scramble an egg with coconut milk (sugar-free version) and throw it on top of the Whole30 Sweet Potato Hash. When I went to work, I popped it in the microwave for 45 seconds and enjoyed!
Whole30 Sweet Potato Hash Ingredients
Paleo & Whole30-approved
- 2 lbs sweet potatoes, peeled and cubed into small pieces
- 2 Tbsp olive oil
- salt & pepper
- rosemary
- 1 Tbsp minced garlic
- one large onion, chopped
- 1/2 package of sugar-free Italian sausage (I bought the 365 brand from Whole Foods )
- eggs (cook at the time you eat the Whole30 Sweet Potato Hash)
Whole30 Sweet Potato Hash Instructions
- Preheat oven to 400.
- Peel sweet potatoes and dice.
- Dice garlic and onion.
- Cook sausage until no longer pink. Do not over cook the sausage as it will be put the oven to become crispy.
- Sauté onion in sausage grease. When transparent, add garlic and stir until the delicious smell fills your kitchen.
- Toss sweet potato cubes in a bowl with sausage, onion, garlic and the additional spices.
- Spread them on your cookie sheet in a single layer.
- Roast for 40 minutes total, stirring once, so they brown more evenly.
- When you are ready to eat, top with a fried, scrambled or poached egg and EAT!
