Whole30 Meatloaf
Three more days until my trip to DC, and I can hardly wait to be with my best friends. I am in the height of laundry which if you are like me can take a long time. I was just flipping my second load when I realized that I hadn’t started dinner yet. If I have taught you anything on my Whole30 journey, it is that meal prep can take a while.
Whole30 meatloaf sounded like the simplest and quickest option for dinner. The Whole30 meatloaf is a new delicious twist on an old classic. My favorite part is the butternut squash makes it moist and adds a new flavor.
Whole30 Meatloaf Ingredients:
- 2 tsp olive oil
- 1 small yellow onion, chopped
- 2 garlic cloves, minced
- 1/2 small butternut squash, peeled, seeded & finely cubed
- 2 tsp chopped fresh sage
- 1/2 tsp red pepper flakes (more if you like it really hot)
- sea salt and ground pepper to taste
- 1 lb ground turkey
- 1 cup Whole30 Italian “bread” crumbs
- 1 large egg
Whole30 Meatloaf Recipe:
- Preheat oven to 400 F. Line a baking dish with parchment paper.
- In a large skillet, heat the olive oil on medium-high. Add to it the onion, garlic, butternut squash & bacon and saute for about 10 minutes until squash begins to brown, lower the heat if need be. Next, add the sage, red pepper flakes, salt and pepper and cook for an additional minute. Remove and allow to cool.
- In a large bowl, combine the turkey, bread crumbs, and egg. Add the vegetable mixture and season with 1 tsp salt and 1/2 tsp pepper. Use your hands to combine all ingredients. Form your mini meatloaves like flattened sausages.
- Bake for 20-25 minutes or until cooked through.
Yields 8 mini meatloaves.
