Whole30 Greek Meatballs
Today is the last day of I dream of junk food! It has been a long three days filled with sugar plum dancing through my dreams. Last night, I did a lovely tango with a slice of pizza who dropped me in a fountain of wine. Oh yes, the dreaming of food stage had gotten a bit out of hand. Thankfully, the Whole30 book says this will end tomorrow. I pray that it does as I can’t take another wacky night of dancing food.
For dinner, I made a healthy twist on one of my favorite meals. The Whole30 Greek Meatballs were as filling as a gyro with a fraction of the calories. I paired it with a dairy free Tzatziki sauce that was to die for! Happy Cooking!
Whole30 Greek Meatballs Ingredients
- 1 lb. ground lamb (We used meatloaf mix which is a cheaper option made of veal, beef and lamb mix)
- ½ medium red onion, finely diced (about ½ cup)
- 2 cloves garlic, minced
- zest of ½ lemon
- 1 tablespoon fresh oregano, chopped or 1 teaspoon dried oregano
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- sea salt and pepper, to taste
Whole30 Greek Meatballs Recipe
- Preheat oven to 350 degrees F.
- Combine all the meatball ingredients together and form into approximately 1-1/2 to 2 inch balls.
- Place on a raised edge baking pan and bake for 25 minutes.
- Serve with Whole30 tzatziki sauce and enjoy!
Whole30 Tzatziki Sauce Ingredients
- 2/3 cup avocado oil or light olive oil
- 2 Tbsp lemon juice
- 2 cloves of garlic, minced
- 1/4 cup fresh dill or 1 Tbsp dried dill
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 Tbsp coconut milk
- 1 cup cucumber, seeded and shredded
Whole30 Tzatziki Sauce Recipe
- Add minced garlic and lemon juice to food processor.
- Pulverize.
- Add everything else except oil, coconut milk and cucumber.
- Pulse to combine.
- Drizzle with oil.
- Add coconut milk and cucumber once oil is incorporated.
- Pulse just to combine.
