Whole30 Fajitas
So here we are one day 10. As the book say day 10 and 11 are the most common days for people to cheat. My goal is to survive the next 48 hours without any slip ups. This should be a challenge as I have plans to go out to dinner and the Blues game on day 11. It is going to be hard, and it falls on the day that I am most likely to cheat! This is going to take some serious willpower. I will keep you updated if my whole30 ends at day 11 or I brave through. 🙂
Now that we have taken a detour for my fears of day 11, let’s get back to today. I had my sister-in-law over. She too is doing Whole30, but this is the first time that I cooked for someone besides Brad. Brad would eat a burnt meal just to keep me from crying, but tonight I had a real judge.
The verdict came in from both that Whole30 Fajitas is a keeper. Brad said it was the closest real meal he has had in weeks, and it reminded him of our favorite Chipotle salad without cheese, of course. Making the Whole30 Fajitas was easy, like every other time.
Whole30 Fajita Ingredients
- Lettuce for salad
- 3 bell peppers (use your favorite color)
- 1 onion
- 4 chicken breast
- 2 TBSP extra virgin olive oil
- Whole30 Fajita Mix
- ¼ cup chili powder
- 2 tablespoons ground cumin
- 1 tablespoon salt
- 4 teaspoon black pepper
- 3 teaspoon dried oregano
- 2 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tsp parsley
Whole30 Fajita Recipe
- Cut up peppers, onions and chicken into strips.
- Warm skillet and extra virgin olive oil.
- Mix Whole30 fajita with peppers, onions and chicken in skillet.
- Cook until peppers and onions are tender, and chicken is cooked.
- Place fajitas on top of salad and dress with guacamole and salsa.
