Whole30 | Paleo Sweet Potato Nachos is a healthier version of my favorite guilty pleasure. I frankly love nachos! From the convenience of self-contained perfect bites to the bubbly cheese, it is heaven. When Brad and I started our weight loss journey, I thought my nacho love would be ancient history!  Luckily, we have found a healthier option, Whole30 | Paleo Sweet Potato Nachos.

Whole30 | Paleo Sweet Potato Nachos starts with homemade sweet potato chips. For those who are unfamiliar with making homemade Whole30 approved sweet potato chips, don’t worry, I have easy instructions that make amazing sweet potato chips.

 After you make your Whole30 sweet potato chips, your creativity can run wild! For tonight’s Whole30 | Paleo Sweet Potato Nachos, Brad and I are making a Whole30 BBQ pulled pork with homemade spicy guacamole. Yummy!!! The pulled pork gives the perfect amount of sweetness to accompany the sweet potato chip. When it is met with the spice of the guacamole, it is surely a savory meal that everyone will love.

Whole30 | Paleo Sweet Potato Nachos Ingredients

  • 3 large sweet potatoes
  • 2 tbsp melted coconut oil
  • 1 tsp sea salt
  • 1 pound pork tenderloin
  • Teaspoon of chili powder
  • Teaspoon of cayenne pepper
  • 2 teaspoon of paprika
  • 2 tablespoons ghee or clarified butter
  • 1 small onion
  • diced 3 cloves sautée garlic
  •  ½ cup apple cider
  • can (3 ounces) tomato paste
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon chipotle powder

Whole30 | Paleo Sweet Potato Nachos Instructions

  1. Prepare Whole30 Sweet Potato Chips starting with preheating the oven to 375 degrees F.
  2. Rub pork with spices and place in over at 350 degrees F for 20 minutes
  3. Pull pork and toss in Whole30 BBQ Sauce
  4. Top Whole30 Sweet Potato Chips with your desired toppings and enjoy
