Whole30 Bacon-Wrapped Chicken

I was craving my Chicken Club Sandwich, but the Homemade Honey Mustard, bread and Parmesan Crisp are not Whole30 approved. I did take inspiration from my weaved bacon  to form Whole30 Bacon-Wrapped Chicken.

The Whole30 Bacon-Wrapped Chicken is essentially my Chicken Club within Whole30 compliant standards. To make the dish similar to an actual chicken club, I added avocado slices and Whole30 Ranch.

Next time, I make Whole30 Bacon-Wrapped Chicken, I am going to get even more adventures and add jalapenos under the wrapped bacon to give a real kick to every bite! Have fun cooking this and feel free to get a little adventure with the base recipe.

Ingredients for the Whole30 Bacon-Wrapped Chicken:

  • 6 chicken breasts
  • 1 (1lb.) package sugar-free bacon
  • healthy sprinkle of sea salt
  • healthy sprinkle of black pepper
  • 1 TBS. garlic powder
  • 1 TBS. onion powder
  • 1 TBS. chili powder
  • 1 TBS.  poultry seasoning

Whole30 Bacon-Wrapped Chicken Recipe:

  1. Preheat oven to 425, and line a 9×9 baking dish with aluminum foil.
  2. Mix all seasonings together and then distribute evenly on chicken breasts.
  3. Wrap each breast with 2-3 slices of bacon, and place them in the baking dish.
  4. Pour wine into the bottom of the dish (it should make about 1/4 inch of liquid at the bottom of the dish). This moistens the chicken as it bakes, and adds a tantalizing flavor!
  5. Bake (uncovered) for 40 minutes, or until each breast reaches an internal temperature of 165 degrees.
