Whole30 sweet potato chips

I am downright craving today. Clearly it is not an actual craving, but rather my brain trying to fill a void. It started with the need for a burger which I cured with a bunless burger topped with Whole30 Burger Sauce. I rounded out the healthier version of my craving with Whole30 Sweet Potato Chips.

Whole30 Sweet Potato Chips go great with any meal. I particularly like to pair Whole30 Sweet Potato Chips with Whole30 approved salsa. It gives the perfect amount of savory with spice. Try the delicious Whole30 Sweet Potato chips and determine how best to fit it into your weekly menu!

Whole30 Sweet Potato Ingredients

  • 2 large sweet potatoes
  • 2 tbsp melted coconut oil
  • 1 tsp sea salt

Recipe for Whole30 Sweet Potato Chips

  1. Preheat oven to 375 degrees F. Peel sweet potatoes and slice thinly, using either a mandolin or sharp knife. In a large bowl, toss sweet potatoes with coconut oil, rosemary, and salt.
  2. Place sweet potato chips in a single layer on a rimmed baking sheet covered with parchment paper. Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes. For the last ten minutes, watch the chips closely and pull off any chips that start to brown, until all of the chips are cooked.

Whole30 Meal Planning-Week 2

Week two is over! I successfully completed 2/4 of the Whole30 program without any cheats and slip-ups. This week was still hard. Whole30 Mayo

You will realize that Whole30 Mayo will be the base of many recipes such as Whole30 Burger Sauce and Whole30 Ranch.

The first time I made it, it was an epic disaster. I didn’t realize that light olive oil was different than extra virgin light olive oil. In an attempt to salvage the ingredients, I tried to make it into a cream sauce over spaghetti noodles, but it turned out awful and got tossed after two bites. That night was a scrambled egg dinner night after one disaster.

The second time, I made Whole30 Mayo, it turned out fantastic. If you follow the recipe below and use light olive oil, you will be just fine. Whole30 Mayo is the best mayonnaise I have ever had. I now find ways to incorporate the base into spiced up condiments such as Whole30 Ranch and Whole30 Burger Sauce.

Whole30 Mayo Ingredients

  • 1-1/4 cup of light olive oil, divided
  • 1 egg
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 1/2 to 1 lemon, juiced

Instructions for Whole30 Mayo 

  1. Place the egg, 1/4 cup of olive oil, mustard powder, and salt in a mixing bowl, blender, or food processor. Mix thoroughly.
  2. While the food processor or blender is running (or while mixing in a bowl with a stick blender),  slowly drizzle in the remaining cup of olive oil.
  3. After you’ve added all the oil and the mixture has emulsified, add lemon juice to taste, stirring gently with a spoon to incorporate.

*An emulsion is a mixture of two liquids that would ordinarily not mix together, like eggs and oil. By slowly whisking the oil into the eggs, you create an end product that is thicker than the two original liquids.

Whole30 Lime Slaw Mix accompanied while Whole30 Avocado Cilantro Sauce makes the perfect Lent Friday night meal-Whole30 Fish Tacos.

Whole30 Lime Slaw Mix Ingredients

  • Purchase either a package of cole slaw mix or shred 3 cups of mixed cabbage with a handful of shredded carrots
  • 1/4 cup of fresh chopped cilantro, leaves only
  • Juice of 1 lime mixed with 2 tbs of olive oil and salt to taste
  • 1 mango

Woohoo! I made it through the Blues game without cheating even with all the beers being passed around me. Can we talk about an impressive victory for me and my Whole30 journey?! I am one step closer to completing Whole30.

Today, we entered Day 12 to 15 which is dreaming of junk food. Like clockwork, I woke up after a magical rest and dreams of chocolate chip cookies. They were amazing, fluffy and overflowing with chocolate. The alarm went off, and I felt guilty. Obviously, there was no reason to feel guilty, so I started my day with a scrumptious bowl of fruit. So here we are one day 10. As the book say day 10 and 11 are the most common days for people to cheat. My goal is to survive the next 48 hours without any slip ups. This should be a challenge as I have plans to go out to dinner and the Blues game on day 11. It is going to be hard, and it falls on the day that I am most likely to cheat! This is going to take some serious willpower. I will keep you updated if my whole30 ends at day 11 or I brave through. 🙂

Now that we have taken a detour for my fears of day 11, let’s get back to today. I had my sister-in-law over. She too is doing Whole30, but this is the first time that I cooked for someone besides Brad. Brad would eat a burnt meal just to keep me from crying,  but tonight I had a real judge. Read more

Directions to make Whole30 Zoodle:zuchinni zoodle noodles

  1. Transform you Zucchini into noodles or whole30 zoodles. You can either buy a zoodle maker or use your trusty cheese grater. We used a cheese grader as who needs another kitchen gadget.
  2. Heat a pan with oil.
  3. When the pan is warm, dump in whole30 zoodles.
  4. Cook and stir periodically until zoodles are tender bout 6-8 minutes.
  5. Toss in sauce and serve.

Today marks a big milestone! It was my first lunch out since starting Whole30, and I didn’t cheat!

I woke up this morning feeling exactly like the book would say, bloated and a bit frustrated that I didn’t see a substantial change. Yes, I understand that it has only been 9 days, but I am an impatient person. I reluctantly got dressed and worried about my business lunch. How was I going to explain to this client that I was on a crazy person diet and could not eat anything on the menu?

To my surprise, that was not the case. I selected a steak salad and had them hold the dressing and cheese. It was hard to give up the “good stuff”, but I couldn’t cheat on day 9. I tossed the salad with vinegar and oil and mixed the Whole30 approved mango, sunflower seeds and avocado. At the end of the meal, I committed to a peer how amazing the salad was and how I didn’t miss my usual order. Hold the phone!!! This sentence just came out of my mouth. I was beyond shocked that I made a healthy decision while everyone else was eating french fries. Read more

Brad was lucky enough to be given the day off today, and I could stomach waking up early to work…Guess who took the day off as well. 🙂 Poor Brad didn’t realize that our day off was going to be spent with a honey-to-do list. In exchange for all of his hard work, I made him Whole30 Chili.
